As always we love recipes that you prepare in 5 minutes and then pop in the oven. And this recipe is a perfect example of that.

The Roasted Sweet Potato recipe is perfect as a side dish for either lunch or dinner. And you can make it for the whole family because in our experience, toddlers love to copy adults, and if you are eating these, chances are that they will too.

We have added some simple spices that give them more flavor but are not so overpowering that your toddler will swear to never eat them again.

And although the cinnamon and paprika combination might sound strange, trust us, you'll never need another roasted sweet potato recipe again. And it is soooo easy.

Sweet potatoes are the main food in this dish (obviously) and if you have an older baby or toddler, they're probably best served as a side dish. You can give them to a really small baby too.

I love to make them with roasted lemon salmon (recipe coming soon) and salad.

For Max, I also make the salmon and add some cut up cucumber (tip: I find that cucumber is the easiest veg to add to any meal for the toddler and one they will least likely reject because they don't have a strong taste).

Remember, babies can have spices from the start (except salt)! But you'd probably want to go easy with the spicy ones and gradually introduce new flavors.

We've used sweet potatoes in a lot of dishes but they're so good and nutritious that they really deserve their own one.

One of the main nutrients that we can find in sweet potatoes is vitamin A. It is a crucial nutrient for eyesight and is also great in those summer months. That's because as the carotenoids which are vitamin A precursors can provide protection of the skin against UV rays.

Sweet potatoes also have a good amount of vitamins B6 and C.

But what they're really abundant in is minerals. Manganese, copper, potassium, and iron – just to name a few.

And fiber. Sweet potatoes are known for their fiber content so use this information if your child's bowels need a little boost.

Roasted Sweet Potato Recipe Preparation Tips

After peeling the sweet potatoes you could wash them but I find that if you wash them they become quite soggy and my toddler likes them less. Peeling should be enough to remove dirt and any pesticide residue at this point.

It's really crucial that you mix the sweet potatoes with the oil and spices with your hands as you'd want each little bit of the sweet potato to be covered with the mixture. That'll also give them that extra crispiness in the oven.

And yes, you can use another oil but bear in mind that olive oil has those great unsaturated fatty acids that can keep your heart safe from diseases.

Regarding salt, babies under 1 shouldn't really have it in their meals whereas toddlers under the age of 2 should have a limited amount. Basically meaning a pinch with lunch and/or dinner meals. So if you choose to add salt into a toddlers meal, keep in mind the amount.

For children over the age of 2 and adults, the recommendation is not to exceed 1 teaspoon of added salt throughout the day.

Ingredients

  • 4 medium sweet potatoes
  • tsp ground cinnamon
  • tsp sweet paprika
  • 2 tsp olive oil

Optional

  • 2 rosemary springs
  • 2 garlic cloves, chopped up
  • 1 teaspoon salt

Instructions

  • Preheat oven to 200ºC / 400ºF

  • Peel the sweet potatoes and cut into cubes

  • Place on a roasting tray in a singe layer (this will help them get nice and crispy)

  • Add all the spices and olive oil and mix with your hands so that each piece is coated with the mixture; add rosemary springs at the end

  • Bake for 25 minutes (or longer if you want them crispier)
