While December holds holiday celebrations, I always love January because the celebrations this month feel more intimate. A low key double date with friends from your neighborhood, a book club party with new friends who will hold you accountable to reading one good book each month, or even a simple night in that you want to make a little fancy to toast to the first weekend of the new year.

Whatever you may be celebrating this month - I have the perfect co*cktail for you that feels and tastes just as fresh as January!

This Lavender Lillet Fizz co*cktail from the 2019 co*cktail Calendar will be the perfect cozy celebration drink, as the lavender will provide a sense of calming that blends so perfectly with the little pop of excitement from the bubbly!

INGREDIENTS

for the lavender simple syrup:

  • 1 tablespoon of lavender flowers

  • 1 cup of granulated sugar

  • 1 cup of water

for the lavender lillet fizz co*cktail:

  • 2 ounces of Lillet blanc

  • 1 ounce of champagne

  • 1/2 ounce of Belvoir elderflower lemonade

  • Fresh lavender sprigs for garnish

DIRECTIONS

for the lavender simple syrup:

  1. In a small saucepan over medium heat, whisk together the water and sugar until the sugar has dissolved.

  2. Stir in the lavender, and bring the mixture to a boil.

  3. Lower the heat to medium-low, and simmer the mixture until it becomes thick (the syrup consistency!). Recommended time is about 15 minutes.

  4. Remove the syrup from heat, and strain the syrup with a fine mesh strainer to separate the syrup from the lavender flowers.

  5. Let the syrup cool completely before adding it to the co*cktail!

*The lavender simple syrup can be made in advance and refrigerated in an airtight container for up to one week.

  1. Fill a co*cktail shaker with ice.

  2. Add the Lillet blanc, Belvoir elderflower lemonade, and 1/2 ounce of your lavender simple syrup to the shaker, and shake vigorously.

  3. Strain the mixture into a chilled glass.

  4. Top the co*cktail with your champagne!

  5. Garnish with a few sprigs of fresh lavender, and enjoy immediately!
