To help inspire and encourage you, I’m running a series all summer called “In Season Now.” Throughout the summer, I’ll bring you as many quality recipes that I can find that feature in-season fruits or vegetables.

Let’s start with bell peppers! Whether bell peppers are already in season where you live, or you are waiting patiently for them to grow, this list of bell pepper recipes will inspire you and leave you with plenty of ideas for using bell peppers for breakfast, lunch, dinner, and snacks!

Bell Pepper Nutrition

Before I get to the recipes, let’s talk about how nutritious bell peppers are. They are worth including in your diet! Some people with arthritis are sensitive to vegetables in the nightshade family, which includes bell peppers. Please keep in mind that doesn’t mean they cause inflammation for everyone. You just need to test and see if they cause problems for you.

So let’s look at what nutrients you’ll be getting when you include bell peppers in your diet.
